Belizean Pico de Gallo is a healthy snack that is extremely easy to make. This “meal” is synonymous with Mexican cuisine but if you have ever been to Belize you will notice that it is everywhere! This is because it is so quick and easy to make and we have an abundance of fresh vegetables.

BELIZEAN PICO DE GALLO
I’ve noticed the way people make this salsa differs from place to place, country to country. From the picture above, you can see that Belizean Pico de Gallo has carrots, it is to sweeten the mix – I LOVE it! But you be the judge, check out the recipe below, prepare it for yourself and let me know what you think. It’s how I believe it is mostly made in Belize and of course, how I prefer to make it.
INGREDIENTS
BELIZEAN PICO DE GALLO INGREDIENTS:
- 2 limes, juiced
- 3 ripe tomatoes, diced
- 1 medium red onion, minced
- 1 carrot, minced
- 1 cucumber, diced
- 1 habanero, deseeded and minced (omit if you can’t handle spicy food)
- A handful of fresh cilantro, minced
- Add salt and pepper to taste
INSTRUCTIONS
HOW TO MAKE BELIZEAN PICO DE GALLO
Chop up all the vegetables, combine in a bowl, add the lime juice and let it marinate for a few minutes. Now grab some corn tortilla chips and enjoy!
Tip: If you cook Shrimp or Conch in lime juice and add it to this salsa…VOILA, you have ceviche!
