Belizean Pico de Gallo Recipe

Pico de Gallo is a healthy snack that is extremely easy to make. This “meal” is synonymous with Mexican cuisine but if you have ever been to Belize you will notice that it is everywhere! This is because it is so quick and easy to make and we have an abundance of fresh vegetables.

I’ve noticed the way people make this salsa differs from place to place, country to country. From the picture above, you can see that I add carrot, it is to sweeten the mix – I LOVE it! But you be the judge, check out the recipe, prepare it for yourself and let me know what you think. It’s how I believe it is mostly made in Belize and of course, how I prefer to make it.

Tip: If you marinate Shrimp or Conch in lime juice and add it to this salsa…VOILA, you have ceviche!

Belizean Pico de Gallo

Pico de Gallo – Belizean style Recipe

2 limes, juiced

3 ripe tomatoes, diced

1 medium red onion, minced

1 carrot, minced

1 cucumber, diced

1 habanero, deseeded and minced (omit if you can’t handle spicy food)

A handful of fresh cilantro, minced

Add salt and pepper to taste

Directions:

Chop up all the vegetables, combine in a bowl, add the lime juice and let it marinate for a few minutes.

Now grab some corn tortilla chips and enjoy!

    When in Belize I did not find this overly spicy, obviously no habanero, so is there an alternative to give flavor w/o extreme heat?
