3-Day Itinerary for Caye Caulker
In December 2024, I spent three days on Caye Caulker and had a great time soaking up the island’s relaxed vibe. Using Rainbow Hotel as my base, this itinerary includes a mix of snorkeling, local food, beach time, and fun spots to take in the island’s character. If you’re planning a short visit, here’s how to make the most of three days on Caye Caulker.
Day 1 – Walk the Island and Settle into the Vibe

Morning
Start your vacation in Caye Caulker by exploring the island by foot. Grab the local favourite breakfast “Stuffed Fry Jack” at Errolyn’s House of Fryjacks or Jenny’s Take Out, then walk southeast along the beach to the airport and loop back through the west side. It’s a simple way to get a feel for the island’s size and character, passing a mix of small shops, homes, and quiet local spots along the way.
Afternoon
In the afternoon, grab lunch at Meldy’s. It’s a no-frills local spot known for its delicious home-style Belizean meals. Try the fried fish with rice and beans or whatever’s on special that day. Then head to The Split for a relaxing afternoon. This iconic hangout is great for swimming, people-watching, and enjoying the cool Caribbean breeze.
Evening
Later in the evening, head to I&I Reggae Bar or Tapper’s Dive Bar to get a feel for Caye Caulker’s nightlife. Both spots have rooftop swings, lively music, and an easygoing crowd. They’re great places to grab a drink, meet people, and enjoy the island vibe after dark.
Day 2 – Snorkel Hol Chan and Catch the Sunset

Morning
Head to Hol Chan Marine Reserve and Shark Ray Alley for a half-day snorkeling tour. This is Belize’s most popular marine site, located just south of Ambergris Caye. Expect to see colourful coral, sea turtles, nurse sharks, and schools of tropical fish.
Afternoon
Once back on the island, grab a quick lunch at Auntie’s Take Out, an affordable local spot for Belizean fast food. Then visit Stingray Beach, a quiet and well-kept beach across from Iguana Reef Inn. Around 4 p.m., stingrays often come close to shore as they’re fed by locals. Some people enjoy this up-close experience, while others may want to skip it due to concerns about feeding wildlife.
Evening
Wrap up the day at The Pelican Sunset Bar. This small waterfront spot is perfect for watching the sunset. It’s popular, so arrive early to grab a good seat. Happy hour runs from 2 to 5 p.m. with deals on local drinks.
Day 3 – Life of a Fisherman and Seafood BBQ

Morning
Start your day at Namaste Cafe, a peaceful spot that offers morning yoga sessions followed by healthy brunch options. Whether you join a class or just come for the food, it’s a great way to ease into your final day on the island.
Afternoon
Join the Life of a Fisherman tour by Knotty Tours for a hands-on fishing experience. Jr and other fishermen will take you out on their boats to show you their local fishing methods. Depending on the season, you might catch fish, conch, or lobster. It’s a fun way to spend the afternoon while learning about the island’s fishing culture.
Evening
After returning to shore, the best part of the tour is getting to grill your fresh catch for dinner. The tour includes a beachside BBQ where everything is prepared Belizean-style. It’s a relaxed and social way to end your time on the island—eating fresh seafood with cold drinks and good company.
